KINARA - OUR NAME

The word ‘KINARA’ means river shore in Punjabi, it has been carefully chosen to reflect the positioning, history and style of the restaurant. Punjab has five rivers, and much of Punjab’s prosperity has risen because of the fertile shores of these rivers. The lifestyle and cuisine of the Punjabi shores are recreated here next to the Singapore river. The style is a warm, friendly honest nature with a generous healthy cuisine.

KINARA - OUR CUISINE

Punjabi cuisine, like all matured cuisines has been very dynamic. The pre-moghul era saw a predominantly vegetarian diet with certain meat (lamb & chicken) cooked simply with Punjabi spices. The Moghul era introduced the use of creams and nuts. As Punjabis migrated they adapted to their newly available produce. In Singapore & Malaysia Punjabis use seafood actively and our highly trained Indian Chefs have created interesting seafood dishes using traditional Punjabi cooking techniques.

The traditional North Indian style of dining is designed to please all senses; start with Kebabs (tandoori food) which can be simply described as marinated meats or vegetables skewered and cooked in the tandoor (a clay oven using charcoal as fuel). This is followed by gravy or sauce based dishes which have been prepared in Handi’s (traditional brass cooking pots) and accompanied with Naan (wholemeal breads cooked in the tandoor) and basmati rice. The traditional belief that a dinner must be left with a sweet taste in the mouth is achieved by having a dessert prepared by our Halwai (Indian sweet maker) and finished off with a cup of hot Masala tea (lightly spiced tea).

KINARA has experienced Tandoori & Handi chefs trained in India and an Indian Halwai to create sweets authentically – as eaten in a discerning North Indian home.

KINARA - OUR ENVIRONMENT

As North Indian shore cuisine has adapted over the years so has North Indian Art, particularly the use of stone, wood and metal. Sandstone, teakwood, brass, copper and iron has been carved, shaped or moulded in a manner which astounds man today. A selection of such pieces are used to re-create a Haveli (an Indian bungalow) in KINARA – a building that has been in the hands of many generations, that has had successive changes and modifications so that you, our guest, may encounter the various layers of occupation in the stones and woodwork of the building.
